One of the simplest and all time favourite recipes of mine is the ketogenic tender coconut icecream.

what you will need:
- 1 tender coconut (with more meat and less water)
- Cream cheese 1 block
- stevia or erythritol sweetner
- fresh cream – 250 ml
- Vanailla essence
put everything in a mixer and make it a thick paste. Add more coconut meat or cream cheese to make it more creamy if the consistency is watery.
Freeze.
it will be sligtly icicled, so you can make popsicles of it aswell.
If you like it more creamy, Crush / batter and serve.
